We have pennying (Throwing pennys), bashing, and icing.

Well, juniors used white paint, baby powder, white-out, and bleach, while seniors usually used black paint, charcoal, black ink, and... um... pine tar, I think. But after two years of disaster, they threatened suspensions for anyone with paint on their shirts, willing or not, which happened to be my junior year and the first with the new expansions to the school. So that stopped things quickly. XD;

Thats no fun.

Last year upperclassmen threw stink bombs in the Freshman hallways, thank god my locker was in the Junior wing XD

There were 3 document based questions and 2 free response questions.

Basically 5 essays.

Nope. That tends to be more for reading and not with history, unless it's American History. But they wont expect to remember exact information about random passages from random European countries and European colonies.
