The fate of Pokemon Amie and Super Training?

Well, it wouldn't be the first time they've changed an evolution method due to a scrapped mechanic; Feebas used to evolve with maxxed beauty pre-Gen V, after all...honestly I prefer the Prism Scale method, it made life a lot easier.

If Amie DOES stay in the next games, I can imagine more Pokemon needing it for evolution. But then, if they're thinking about simplifying the games, wouldn't it make more sense to cut Amie out? It needlessly complicates affection and even gives it in-battle effects.

When Feebas did revert to beauty in ORAS, they did at least make it easier. However, while I loved Pokemon Amie, I could understand it being removed and if it's the case, they'll just give Eevee a new held item to evolve into Sylveon with, a la Gligar's Razor Fang, Sneasel's Razor Claw, Happiny's Oval Stone etc.

I think both will remain, as they aren't exclusive to Kalos.

This exactly. If anything changes, they might just be implemented in a different way; I think it would be cool if for Pokémon-Amie they gave you different backgrounds where the Pokémon can be pet in. Like, in gen 6, the background is always some bizarre rainbow-land alternate dimension or something. I think it would be cool if "Pokémon-Amie" in gen 7 had you take the Pokémon out of its Poké Ball to pet them in the location--cave, city, grass, etc.--that you're currently in. In that case, it may be called something different while still very clearly being "Pokémon-Amie."

As for Super Training, they might give it some new/different/revamped courses, to align with the new Pokémon. They might change they way it's played, too, but unless that change is to make it easier/faster, I don't think it would be a necessary change.

I think Pokemon Amie would stay in S/M, considering that Eevee needs it to evolve to Sylveon; then again, they might change that evolution up a tad so it just needs a Fairy move and levels up.

Both should be combined into a new mechanic. For example, similar to the anime/manga, trainers shout things to their pokemon that can change the tide of battle. What they say would depend on the remaining HP number and trainer's personality (nature on card).
Encouragement temporarily boost stats and evasion. Discouragement has the opposite effect and the pokemon might ignore orders or miss. Of course this feature won't carry into the competitive scene. At the end of the battle, if you are the winner, the pokemon's affinity will rise by a few points and you have the option to congratulate by either petting it, feeding it a treat, or skip both. However, if you are the loser, the pokemon's affinity will drop by a few points.

I can see that being a possibility if Amie gets removed. But then that would also mean Eevee can't have a Fairy move if it wants to evolve into Espeon/Umbreon.

I really hope they keep in Super Training, that was a pretty useful feature they added on.

Considering that they kept Amie and Super Training in ORAS, I'm 50/50 in the possibility of it's return.

Going back to my idea of Pokémon Amie being implemented differently, it would be cool if it was incorporated into a "Pokémon following you" mechanic. I mentioned I'd like for the background of Amie to change in accordance to your character's in-game location; what if you could just turn around and interact with your following Pokémon, but instead of the speech bubbles like would appear in past games, it would activate "Pokémon Amie" (which would in turn take place on the overworld rather than the Amie Alternate Universe land). I think that would be a lot of fun!
