I go though the game with just my team and then I catch all the pokemon in the dex as something to do after I have completed the main story.

Their is a place called White Forest that you only go to in White and in Black it is Black City.

So far I have not encountered a shiny Pokemon, but nice catches guys and gals! :)

I have encounter someone like that, but you just have to be the bigger person!
