It does start a bit sluggish. But it certainly helped that I had a particular interest towards CERN and time travel as scientific (in this case, sci-fi) aspects. Plus Kurisu was just so adorable. And the main character is voiced by Riku (from Kingdom Hearts, another franchise I enjoy) so that's also a plus!
F/Sn was actually pretty subpar (the hype surrounding it might have affected my opinion on it) come to think of it. I still enjoyed Saber's character there, though. <3 F/Z does look like a really promising anime, but it's so long... and it's already over, as far as I know.
Again, FMA's a gargantuan anime and I don't think I'll run out of similar sentiments like that, so I think it's just not for me (glad you enjoyed such an anime, though!). But if you do plan on rewatching it, then maybe you should! (: I'd like to watch it with you, although it would be an odd experience because I'll be looking at it blind.
Oh Twilight Princess is indeed awesome. <3 You should try starting one up from a borrowed copy to test the waters. Like Skyward Sword or one of the older titles (A Link to the Past and Ocarina of Time come to mind, if you're receptive to graphics of the past generations). You might enjoy it, but they can be pretty long. D:
