Well, I don't ever curse, so normally all I say when I make a mistake (which happens quite often) I either say one of these, or some made-up word I think of:

Ehh! (probably my most common one.. >_>)
Whoops..
Oops!
Argh!
Eh, sorry!
Darn..
Umm...
Uhh...
Dangit!
Man..
