I'm big on Final Fantasy X's soundtrack. It was great piece after great piece, it truly made you feel as if you were apart of that game's world.

Also, most sleep on this soundtrack, but Rogue Galaxy's soundtrack is awesome! You can listen to every song, from the simple Town/Distress Theme to the Main Theme of the Game or The End Title Ballad. It's just a good soundtrack, overall. It's hard to say that nowadays.

And I agree Brock_Lee, all soundtracks from KH1 and 2. I don't even want to get started on KH 1 and 2... -_-\

I love the Boss Battle of Final Fantasy VII or the Battle Theme of Final Fantasy X.
The Hyrule Temple Song of SSBM was cool, also the Fire Emblem's Theme and the Fountain of Dreams Theme. The Main The of SSBB is AMAZING too.

For the slim majority who have played "Pacman: Adventures in Time" for PC, the Western time's music is really awesome.

Twilight Princess and Final Fantasy VII, VIII, and X, especially the Highwind song from VII. Kingdom Hearts also has a nice soundtrack. My guilty pleasure, however, is the OST for Sonic Adventure 2. XD
