Pizza Cook

The restaurant owner would save so much money on gas with a Charmeleon in the kitchen powering the oven. There would also have to be a vegetable garden maintained by a grass Pokémon for what would probably be the most delicious pizza sauce in the region, as well as other vegetables and natural grown food that can go on a pizza, or in a salad or pasta. The water used for the pasta could be water purified by water Pokémon that have that ability.
 
Health visitor

I... dunno what this even is... highly tempted to take it literally =P
*one Google search later* So uh... check in on young kids every once in a while after they've hatched, and offer advice to parents?

Aha! I'll assess the newly hatched Eevee's and help them determine what they wish to evolve in! Then I help out to make sure both the parents and the child are happy with the choice =D
 
Interpreter

Good job for a language nerd like me! I could be out and about helping Pokémon researchers communicate with the native Pokémon in a certain environment, or be a public interpreter assisting with the same task in, say, a school or a courtroom.

(If only Pikachu and Tim Goodman had let me communicate with that evil mime, maybe they'd have saved themselves some time...)
 
Private investigator

Involves hunting for information and watching people. Manages the first part okay...sort of? Means talking to people. Who wants to talk to people? Cannot expect much help from a Pokemon, unfortunately. Hopefully gains access to Holo Caster messages from the client. Fares better in reading random messages for clues.

Enlists a Luxray for surveillance help. Sees through solid objects. Spots any movement easily. Provides some muscle too.
 
Speech therapist

Ah yes... the various intonations of a Glaceon's speech. That means 'Hi, how are you?' btw.
Guess I'd have to teach everyone to understand Glaceonian first. Then teach them how to properly pronounce it? 🤔

Criminal

Is a Sandslash stuck between two of your Onix's segments ? Does your Arbok have a knotted tail ? Did your Raticate break a tooth ?
No worries, I will arrange an appointment with the specialist you need and prescribe the right medication for your pokémon to feel better in the meantime!
 
Blacksmith

Just like any ordinary real-world blacksmith... except that I'm also authorized to take orders from a Pokémon Doctor to fix the shells and armors of (mostly) Steel-type Pokémon! You can say I'm a kind of orthopedist as well, because I can repair and replace damaged parts of their armor or provide them with parts they're missing.
 
Bank Clerk

Seems straightforward. Speaks with customers. Practices proper security protocols. May need to be on alert for Pokemon capable of reading minds. Must be vigilant against mischievous Ghost Pokemon trying to sneak past. Cannot let Rotoms interface with the computer.

Or is this a Pokemon Bank clerk job? Inspects Pokemon for signs for being an imposter. Refuses all the sus ones. Processes deep storage and long distance Pokemon withdrawals and deposits too.
 
Shop assistant.

This doesn't take much imagination, you see people doing this job at the Pokemart in every city. I think being a shop assistant in the Pokemon universe may not necessarily be much different than it is in our world. I might not even get to work with any Pokemon.

Assuming I can pick any store I will be moving to Hoenn, and get a job as an assistant at the Pretty Petal Flower shop, taking care of the plants.

Laboratory technician

Not much different from our world's definition, although I'd imagine that it also involves taking samples from Pokémon's bodies to assess their health and such. I'm sure there's at least one in every Pokémon Center like in most hospitals for humans, and in specialized clinics too.

Now, how I would take a sample from a Mon like Porygon or Rotom is beyond me, but hey, technology is amazing...
