So I heard that knock off is getting pretty popular and common in competitve battling. I'm still new here. Does anyone know which pokemon are likely to use it and how to protect against the move/minimize the dammage?

The main Knock Off users are Bisharp, Mega Sableye, Crawdaunt, (Mega) Scizor, Mega Beedrill, Weavile, Azumarill, Mega Gallade, Conkeldurr and Mandibuzz.

Mega Evolutions can't have their Mega Stones knocked off; they also take less damage from Knock Off, as Knock Off's power boost only applies if the opponent has a knockable item.

Mmm, I prefer to use Landorus, both formes. Landorus-T has good bulk and intimate support, so it can switch into a bunch of things like Heracross, and it's pretty much bait for Skarmory or other Landorus to walts right in, only for them to have their items like Shed shell or Choice Scarf removed. It' can be a good pivot for magnezone!

Landorus-I kinda works the same way, but not as bulky, and usually it attracts pokemon with special defense; (like I've had multiple experiences where people switch in their Chanseys or Clefables to it) for them to be knocked off their items too~

I think the best way to pivot against them is to have pokemon with Justified, like Keledo to tank the hit and gain attack, but, otherwise If there was a tough pokemon that had their item knocked off, I'd switch to them. I wouldn't do this far too often though, since the opponent will know what you're up to and predict around that~

In general, defensive fairy, dark, and fighting types with a form of recovery aside from leftovers is what I usually switch into a Knock Off.

Rocky Helmet users are decent candidates to take Knock Offs, as the Knock Off user will take some damage to take off the item. Especially if they have a form of reliable recovery to warrant not using leftovers. Roost Skarmory (OU), physically defensive Morning Sun Arcanine (UU), and regenerator Alomomola (RU) are some that come to mind.

A Gliscor, which already activated its Toxic Orb, is a good example as it no longer needs its item. I've also switched in Unburden users who failed to activate their items (Focus Sash) into weaker Knock Off users before to activate Unburden, but that's moreso an improvised thing than a go-to method of dealing with Knock Off.
