Unsure about the watermelon, but for chicken it's because it was a reletively simple animal to raise. When the slaves were freed, they didn't have a whole lot of resources. A lot of them turned to farming. Chickens were common since they were, compared to other animals, cheap and easy to raise.

About the cows : In the provincial states of where i live, cows are abundant. It is weird for someone not to have one.
