Never counted calories in my life. My mother has been the healthy force for the family, but she avoids carbs anyway.
We sometimes look at calories when deciding between different food products, but not much more than that, and even then, how artificially processed they are, whether they're ecological or not, added sugar, amount of salt, etc. takes precedence. Not getting fat isn't our prime priority, there are other aspects to one's health than that, and even then, I guess there's more to it than just counting calories.
To as large an extent as possible, local ingredients (under no circumstances Danish meat, oh god), environmentally friendly and morally sound stuff. A lot of creative use of different nuts in our cooking, no white bread whatsoever (the only exception being pizza, pretty much), and we've practically replaced cow and pig with chicken and locally hunted boar. Oh and I don't eat eggs because they're disgusting.
Well, that's my family. The food I buy is terrible in comparison.
