Can you suggest a couple of movesets for the ones that are worth EVing?

Will the movesets work well, despite me not having the correct nature?

Yeah, just use Impish on sets that have Careful for Regirock, Relaxed -> Impish sets for Registeel, Bold / Relaxed > Calm for Regice, and Lonely > Adamant / Naughty for Jirachi. Regirock and Regice's Nature might interfere with the EVs are trying to accomplish however.

Okay, thanks. I'll take a look at the sets tomorrow since I have to go for now.

Does Curse (from a ghost type) hit through subs ? I would test it but im tired lol
I'm pretty sure it goes through the Sub but I'll test it out.

EDIT : Here is proof

---
Kingdra used Substitute.
Kingdra lost 25% of its health.
Kingdra made a substitute!
Gengar used Destiny Bond.
Gengar is trying to take its foe with it!
---
Kingdra used Dragon Dance.
Kingdra's attack was raised.
Kingdra's speed was raised.
Gengar used Curse.
Gengar lost 50% of its health.
Gengar cut its health and laid a curse on Kingdra!
Kingdra is afflicted by the curse!
Kingdra lost 25% of its health.

Ignore the stupid movesets <3

I'm running an Uber offensive team that relys on key resistances to come out on top. I'm currently looking for a Pokemon that can serves as both a Ghost resist and a revenge killer (Arceus is banned from the ladder, so don't suggest that).

CB Scizor works or Scarf Dialga or something.

im wanting to try out a defensive lead torterra and was wondering should i max out his def EVs or invest some into his SpDef too?

Torterra is a very poor lead at this point in the metagame, Froslass, Arcanine are all common and all destroy it etc....yeah.

You shuld invest in its def though.

How good are these Pokemon together on the same team? I'll be using this for one of the leagues (Multi-Mix Special League, I'm the heavy weight gym) I'm participating in. I need a good cleric to put in to this team for some support, but it must weigh at least 200lbs.
