Niether. If you saved beforethe egg hatched, you'd notice it always hatched with the same stats, same gender, same color (shiny or not), same everything. The shinyness is deturmined as the day care man hands out the egg, but if you think about it, why save it before he gives the egg, hatch the egg, and load it? You could just hatch the egg, then get a new one, and do stuff (like training pokemon, etc.) while it hatches. This way, you don't waste the game time you spend hatching an egg.
Of course, if you don't want your game time to skyrocket, you can reset after hatching a non-shiny, but I have always hatched many pokemon, and stored them in a box. My little-known shiny Tyrouge hunt started because I want Hitmontop on my team, but I need one with good IVs. So, I'm hatching hundreds of em, and breeding the ones with 31 IVs in the stats I want. It will take a while, but its a good way to shiny hunt in the mean time.
