It's pretty much just the paw pads and head that change sadly.
All that black torso, arms and legs stay the same =\

Which is weird to me as Stufful's torso does change color with it's shiny, just not the legs.

I caught an overworld encounter shiny stufful in Shield and never evolved it due to this.
