Here's a fun game/exercise/whatever. Pick a type to remove. Can be any of them, but obviously some of them are more essential than others.
Where would the Pokémon from that type go? (List as many or few as you like.)
What got me thinking about this was whether Normal type is really necessary. It seems like such a misc type to me, and on top of that it's often used in contexts that don't really make sense, like Pyroar being secondary normal - why? What makes it more Normal than, say, Arcanine?
So imma go through with them and see if I can redistribute things.
Pure normal types
Ratatta & Meowth lines - Dark. idc if they have alt forms with those types. don't @ me
Lickitung - i hate this thing just kill it with fire. Or Water bc saliva? God I hate Lickitung.
Chansey line - Fairy. Why is it not that already
Kangaskhan - Fighting
Tauros - Rock
Ditto - Psychic? Admittedly with Ditto types don't matter, but I can sorta see it as reading its opponents mind to copy its moves.
Eevee - ??? the hardest one.
Porygon - Psychic
Snorlax line - Fighting
Sentret - Grass? Not all Grass types are straight up plants, some just live in a grassy environment, so maybe this is plausible.
Aipom - Grass/Flying
Dunsparce - Bug
Teddiursa - Fighting
Stantler - Grass
Smeargle - Fairy
Miltank - Fairy?
Zigzagoon - Dark
Slakoth - Fighting
Whismur - Fairy
Skitty - Fairy. Again, should be one anyways. Why is it not.
Zangoose - Fighting
Castform - ???
Kecleon - ???
Bidoof - Water. Bibarel gets it anyways.
Buneary - Grass, Lopunny becomes Grass/Fighting
Glameow - Dark
Regigigas - ???
Arceus - ???
Patrat - Ground
Lillipup - ???
Audino - Fairy
Minccino - Psychic
Bouffalant - Rock
Bunnelby - Ground. Diggersby gets it anyways.
Furfrou - Fairy
Yungoos - Fighting
Type: NULL - ???
Komala - Grass
Skwovet - just mercy kill it
Wooloo - weird choice, but how about Steel? It seems like not all Steel mons need to be physically made of metal - Sandslash-A or Cufant for example, and it sometimes just means that they have a very tough exterior. I could imagine that wool being portrayed more like a steel wire mesh and totally making that theme work.
Primary Normal-type Pokemon
Not gonna list them all individually, but all the Normal/Flying pokemon could totally just be Flying. It seems like for some reason they were scared of having Flying be a solo type for most of Pokemon's history, but they seem to be doing it more lately. I don't see any reason why it shouldn't be a solo type, so Pidgey etc is pure flying.
Jigglypuff - Fairy. Another case where being half normal doesn't really make sense. What makes Jigglypuff more normal than, like, Clefairy?
Girafarig - Dark/Psychic. Makes more sense visually anyways.
Azurill - Fairy or Fairy/Water.
Bibarel - just Water
Audino - Fairy. Same point as above.
Deerling - Grass
...in fact just imagine all the pokemon with normal as their first type just lost that type
Secondary Normal-type Pokémon
Litleo - Fire
Helioptile - Electric/Bug
Indeedee (what is this thing, since when does it exist) - Psychic

Whew, that's it! I'm far from suggesting that as an ideal change and in reality if they removed normal they'd probably have to add one or two new types to make some mons work. Within the constraints of existing types, some of those were definitely a reach, but it was still pretty fun.
