Plain old spaghetti in tomato sauce? Just Parmigiano-Reggiano, the king of cheeses.
Keep Parmesan (Englishized commercial imitation of the same cheese) and Grana Padano away from me. Gotta be aged thoroughly, unpasteurized, the cows have to be on a strict diet, hard and sharp, not bitter. If it doesn't meet the criteria and have the seal of approval stamped on the wheel, then it isn't the real deal.
This. And a bit of basil is nice.
Only I hardly have it because I don't particularly like tomato sauce with pasta. I prefer a rose, vodka, or alfredo sauce.
