Pikachu is still my #1 favorite pokemon. :) My favorite legendary is probably either Jirachi or Suicune. For each region, it would be Pikachu for Kanto, Quilava for Johto, Absol/Umbreon/Flygon for Hoenn and Glameow/Buneary for Sinnoh.
