It's sad that Phantasia got remade, what, four times, yet they never really improved much. Sometimes it's OK to keep a game in its original state, but with Phantasia being the game that launched the Tales of series, I think it'd've been better if they at least changed the battle system a bit.
Seriously. I think to Namco Phantasia is just easy, quick money. "Hey, let's port it to this new console. Change a few things, but not a lot. Don't wanna waste too much money!"
Although the most recent Remake- Phantasia X- was quite good. The battle system was actually enjoyable this time.

I love it how Tales of Symphonia gets mentioned in the conversation, and I simply waltz in here and see it. :V
Anyways, pretty much what Joey said. Even though ToS's game as been out for years, there's still the OVA and everything to look forward to for those fans who haven't.. moved on? *coughmecough*
Ha, what a coincidence. =P
Personally I hate the OVA, but love the game. Meh.
As for Phantasia, it's because they made the remakes before they really upgraded the battle system to how it is today. Again, it's all when it was made.
Uh, no.
The GBA version is a direct port of the PSX version. Actually, it's downgraded because they swapped some SNES stuff into the PSX version. (Maps and such.)
The PSP versions could of been vastly improved, seeing as they already had several games out for the PSP by that time that didn't have "Spell Freeze".
I could go on and on about how the ports suck, but I'll just say this instead: The only versions worth buying are the original SNES version, the PSX version, and the recent Phantasia X version included as an extra game in Narikiri Dungeon X.
The GBA version would be up there, since it was localized, but it runs worse than the PSX version. The battles lag far more than they did in the PSX version. I regret wasting my money on it. :/

I wouldn't mind a bit of an update. Like just take the same game, give it some of the improvements to the battle system that ToA/ToV had and re-release it with the PS2 improvements as well. But yeah, I dont think there's really much they could do. They could update the graphics and do them ToV-style but that would detract from some of its charm, imo.
Honestly, I think Symphonia should just be left alone. After all, if they Remake it there's going to be plenty of fans who go "they ruined the magic".
Although if they ever do Remake it, it would like some Aster(Richter)/Marta/Ratatosk cameos done in the original ToS graphics. Would be pretty sweet.
