I think it might have something to do with a bunny considering the first part of its name, and the ear-y could just be referring to its long ears. Though I'm unsure so I'll consult our lord Google!

Had to look this one up since I've only played a little of Guardian Sgns but you get the Latias sign when you're female and get a pokeassist in the sky!

I think his name in the Japanese anime was Satoshi, after the founder of Pokemon! Could be wrong though.
