Hi guys, I have a question for you all. :) Should I start a new game on Pokemon Sun and Pokemon Ultra Sun? I have both copies and I cannot decide which one I should do. ^^

See which Pokemon are exclusive to which version and pick which ones you're more interested in trying. That's usually how I go about it.
The games are identical past that (and are virtually identical to the old Sun and Moon versions too).

Pokemon Sun and Ultra Sun have very similar version exclusives, actually. xD

I misread it, sorry.
In that case, go Ultra. They are literally the same game minus a few features that are exclusive to Ultra. There's literally no reason to play Sun if you have Ultra.

Ultra Sun. You'd be getting pretty much an "upgraded" experience due to being third games.

But I would go with Ultra. From what I heard and from what everyone here is saying, it's better of the two. I plan on buying Ultra Moon soon too to finally compare regular and ultra versions.

As with the other comments, it's usually best to just go straight to US/UM. The two paired versions don't have much difference story-wise (since US/UM is pretty much the third version-type game of this gen) aside from some features that only US/UM has.
US/UM also has some extra Pokemon that don't exist in S/M (though these are mainly just new Ultra Beasts and one mythical) so that makes S/M even more outdated of the two.

Somehow it's comical to me that games of a new generation literally got outdated before the generation was even over.
It got literal this time because of US/UM being the first time new Pokemon were introduced mid-generation.
Did you already finish both of them? If you have than I suggest restarting Sun after you transfer any event exclusive or special Pokémon from it to Pokémon Ultra Sun. If you have them both but haven't started either of them than do a swift play through of Pokémon Sun and a lengthy play through of Pokémon Ultra Sun. You might want to reach the festival plaza in Ultra Sun first to join events and collect points.
