I tend to play Stellaris when I want to forget everything else and just chill; it can get pretty intense but since it is possible to pause and reload savegames at any time it is quite forgiving and not stressful ^^

For relaxing, I play ABZÛ. Unbelievable how relaxing swimming with AI fishes is lol!
Another one I play for relaxation is RDR 2, but only when I am confident I have enough spare time!

I mostly default to Pokemon for a relaxing game, but I'm finding Genshin is pretty good for that too - at least just doing dailies and stuff. Honestly though, the ultimate game for relaxation in probably Journey. I just don't break that one out often cause I have it on my old PS3 and that spends most of its time sitting in a cupboard.
