I would take a starter with me. Most likely, my choice would be Chimchar. I've become even more attached to the little fire monkey. Plus, having an Infernape would be awesome.

I've only ever used two starters: Chikorita and Squirtle.

I think that it was slightly easier to use Squirtle for the gym leaders, but Chikorita was easier for the elite four. This is because I had to get it to a higher level than Squirtle was to beat certain gym leaders, and the extra levels paid off at the elite four.
