This is in terms of creativity, Pokémon designs, and characters such as gym leaders and elite four, not counting the anime or games. Please wipe your nostalgia away when answering.

    Galar!

The region has a beautifully intricate design with memorable, alluring cities! The landscape in terms of routes is quite underwhelming though. Kanto, by comparison, I find to be rather unappealing and uninteresting, and I dislike how the cities are all clustered together. Galar also feels much more similar to the United Kingdom than Kanto does to Japan. In terms of gym leaders, I'd say Galar gym leaders are a tad more colourful for me, though there are a lot of fabulous Kanto leaders such as Sabrina and Erica! In terms of Pokémon design, Kanto edges out Galar pretty easily! Not only did they introduce my all-time favourite Pokémon, but they created some truly majestic mons including Dragonair, Articuno, & Wigglytuff! Overall, I'd say that Galar is superior, though not by much!

Galar actually does have some really memorable cities and designs of places and the Pokemon are pretty good overall! That being said, it's tough to beat the original 151, regardless of nostalgia and although both Kanto and Galar don't have much of a story going for them, I prefer the former for the iconic characters and locations :)

Galar is the most diverse in terms of ecology and environment.
Kanto does have that challenge factor, as Exp. Share cannot be deactivated in SWSH. Gen I was busted, because of it's glitchy mechanics.

Kanto for designs, Galar had many I didn't find appealing at all. Then again I've only played Galar once, so if I go through again this opinion could easily change.

Galar for how the gyms were treated as a serious competition. It's my favorite thing about the region.

pokemon designs? galar. although not gonna lie, as simplistic as kanto is, it did have a few good pokemon designs that i still like to this day.
gym leaders? i like the designs of the galar gym leaders over the kanto ones, however memorable the kanto ones were. not counting nostalgia, galar has this one.
region? i really want to say that kanto has the edge here, but that's because of how much the base wild area (non-Isle of Armor) has bothered me in its implementation. conceptually it's good, but the execution could do with a lot of improvement. with IoA and possibly CT, i think galar might be more impressive, though.

tl;dr galar has the edge in most respects. i enjoy playing through the region more than i would kanto though, so there's that.
