Why are people so fascinated with shiny pokemon?

Honestly? I really only like them because they're rare. It's fun to have something that's rare, especially if you find it in the wild, it's like a special treat. Also, I just like them so much because I haven't found one since I played RSE when I was younger - they're elusive and hard to find, basically.

I just love having specific shinies because I prefer their shiny colors above the normal versions - Pokemon like Jumpluff, Lopunny, Altaria, Latias and so on are some primary examples where I'd much rather own their shiny counterparts.

Otherwise if their color palette is meh then a shiny is about as cool to own to me as any other regular Pokemon. :(

Some shiny forms like Charizard, Gyarados and Mega Gardevoir look really cool, but truth is a lot of the shinies either look the same as the original (Tyranitar, Garchomp, most Ice-types) or are a color combination that looks worse than the original (puke-green Groudon, vanilla Giratina, whatever shiny Hawlucha is supposed to look like). I also don't get the appeal of having shiny forms of Pokemon noone likes. What, everyone hates on Dunsparse, but shiny Dunsparse is suddenly OK?

I love finding them because of how rare they are. I get such a good feeling especially when I find one without trying to find one. Also, for the most part, because I prefer their shiny colours to the normal colours. I think it's because I've got so used to seeing them normally, it's such a pleasant surprise to find a shiny Pokemon.
