My favorite music ones are Magic Man by Ludacris and the Bee Gees, Yeti by Coldplay, and Russian Unicorn by Michael Bublé; my favorite soundbites are TWD, Herman Cain, Joe Biden, and of course Ron Paul.

They're essentially just what you might think they are: someone dubs over video content with their own humor, and it turns out fantastically awesome. Also, sometimes they'll add their own graphics into it as well. Here's one they made of Game of Thrones as an example:
