That's the key. The Battle Institute will tell you how versatile your team is, you can test it out there. another way to effectively test it, though you won't get a grade, is the Maison. Of course you could sweep the Maison or Institute battles and still not do well against players.
Players are unique, and different. The trick is predicting what the player will use, and what moves that pokemon will have. This takes a lot of practice. Don't rely too much on damage dealing moves either, something I notice when battling in Battle Spot is that when a player depends almost entirely on damage moves I can break their strategy with one good hypnosis, or toxic and a tank.
Do not underestimate the value of healing moves like roost or rest (with snore or sleep talk). Also, watch priority moves and status changes. There are several moves, and an ability now, that can swap attacks with defenses. You appear to already be paying attention to STAB and type advantages, but don't forget to mix up the move selection a bit. Garchomp can work well in some cases with a poison jab, for example, if it's fast enough, and that helps against grass and fairy types if you get stuck in such a situation.
A lot of strict strategy teams will rocket through the ranks but wind up stuck in the median because they are not adaptive enough, so build more than one team. If you are battling on a rank and notice your strategy cannot beat a lot of other teams, figure out the common strategy for that rank then select a team that opposes them for your battle box before going back to battling. That's how I have been crawling up the ranks, it means figuring out a lot more than just one strategy to find holes in all the strategies.
Also, find your niche. Head to head battles may not be something you're good at, try the others like double, triple, and rotation battles. I found my techniques for battling work best with double battles, and all my pokemon are trained to be optimized in such battles.
For your Staraptor, I'd recommend protect.
