I'm new to ev training, and have a few questions:
Do you only train two stats?
Why?
How do you know which stats to train?
A pokemon can have a total of 510 EVs. A max of 255 EVs can go into one stat, so usually it is ideal to train two stats. However, keep in mind that 4 EV points equal 1 stat point, so you only have to reach 252 (which is divisible by 4) EVs in one stat. Then you could put the leftovers into another stat.
It depends on the pokemon. For example, Alakazam is fast and has a high special stat. You would EV train it in Speed and Special Attack to max out those stats so it's better at sweeping. Other pokemon, such as Togekiss, may want EVs in multiple stats, like HP, Special Attack, and Defense but it depends on the moveset. Go

Okay, so I bred and raised a Raichu from an egg. I'm trying to get her to have high defenses, as well as good speed and attack, and I do plan on using her for wifi battles too. She cant take anymore proteins or anything, so I need help figuring out the best pokemon to EV or IV train her with. so heres the stats:
Name: Hikari
Species: Raichu
Level: 42
Nature: Sassy
HP: 129
Atk: 86
Def:75
Sp. Atk: 94
Sp. Def: 106
Speed: 88
Sassy increases her Special Defense, but decreases her Speed. This may be an issue, as Raichu want to be fast. A good nature would be Timid, Hasty, or Naive.
Staravia and Pikachu give 2 Speed EVs in the Trophy Garden. I believe there's a rich girl near the entrance with a Lopunny, which also gives 2 Speed EVs.
On Route 205, there's a fisherman (the one looking to the right) with 6 Magikarp. Each fish gives 1 Speed EV.
If you have Pearl, Glameow and Purugly give 1 and 2 Speed EV points, respectively. They're found on Route 218, 222, and 229.
Starly, Buizel, and Floatzel are everywhere. The first two give 1 Speed EV while the latter gives 2.
Sometimes Electrike swarm at Valley Windworks (talk to Lucas's/Dawn's sister in Sandgem to see what pokemon is swarming). They appear frequently and give out 1 Speed EV point. Pidgey (route 229), Zigzagoon (route 202), and Skitty (route 222) work as well.
