The game Tem Tem has something similar to the eeveelutions but there are Tucan brids.

Nope according to the Temtem wiki, there's one named Tuwire, and Tukai, and several others. I'd recommend taking a look at the wiki the first evolution is called a Tuwai

Looked at TemTen at one point, but it didn't look interesting enough to me.

I started playing TemTem and enjoyed it but stopped because I found the devs to be really annoying. Every content update, they'd talk about how much superior TemTem is to Pokémon. If they simply talked about the positives of their own game without bashing Pokémon, I'd be playing both.

From what little I saw of TemTem it just felt like off-brand Pokemon to me. I'd rather just play Pokemon =P

Yeah, there are few games that really hit the creature collector genre good without just being Pokemon again. Cassette Beasts did it pretty well and I liked the mechanics/darker story without being edgy. Coromon definitely was toeing the line, but besides those two, I haven't been able to find any creature collector that wasn't one of these three that was worth it.

I played Nexomon: Extinction and it was ok for the most part. It sometimes tried a little too hard with the 4th wall breaking jokes and especially the endgame was brutal if you didn't do some level grinding or potion spamming. Don't know if I would recommend it, though.

I haven't played any of the Pokemon knockoffs.
Did watch a bunch of Pixelmon videos at some point, but didn't find it interesting enough to mess up my copy of Minecraft for =P
