I just had a couple of questions.
I understand that if I want to capture the legendary birds (ice, fire, thunder) will only depend on the starter Pokemon I choose correct? Also at the end of the game I get to choose between the first generation starter Pokemons like charmander, bulbasaur and squirtle.
So assuming I understood perfectly this is what I was planning to do and you guys comment on how feasible it actually is.
So first I will choose a female character so all my starters would be female including the first gen starters. This will allow me to breed other starters because the starter is female and hence a mother. When I am satisfied and captured the legendaries I will send all of these Pokemon to the Bank, transfer them from the bank to my Alpha Sapphire game and then delete all my progress with XY and start over again with a different starter (this way I can get all 3 starter types and the 3 legendary birds).
So in conclusion I will transfer all 3 birds and female starter Pokemon from the first generation (bulbasaur, squirtle and Charmander) to my main game alpha sapphire for breeding future starters and etc.
Is such a plan feasible? Also what are the Online Bank rules? How long do I have to pay the monthly fee? Can I just pay for it once, do the transfer to ORAS, then stop paying until I am ready to do the second transfer on my second play-through (rinse and repeat for the third and final time)?
What happens to the Pokemon I transfered to the game when the Online Bank's subscription is stopped? Do they automatically get frozen/deleted too or do they stay where they are?
Also my final question; is there an XY game that includes both versions in one game or are they always 2 separate entities?

First off, no, you don't get the gen 1 starters at the end of the game, you actually get them, maybe 3 towns in? (I can't remember offhand) basically the first large city you come across you get them.
Yes, the bird trio does depend just on the first starter you choose (Froakie, Chespin or Fennekin. the Gen 1 starters have no bearing on legendaries that appear later in game)
Choosing your character to be male or female has no bearing on the starter being male or female. They ALWAys have a 12.5% chance of being female no matter what you do. Having said that, just save right before you choose a starter (save every few minutes, really, just so you don't go too far) and then just keep resetting until you get a female. You COULD very much do your plan of getting one of each, sending them via poke bank to ORAS (or just keep them in Bank, it doesn't matter which) and then start your game over again, however, with the online connectivity you really don't need to do that. Well, for the birds you absolutely do, but for the rest, not at all. If you get a female froakie, breed some more froakies, then post them on the Global Trading STation (it's an in game trading system that connects to the internet) and ask for Chespin and then ask for Fennekin and within a very short time someone will gladly oblige and then you'll have all gen 6 starters right away. Then when you get a female Squirtle (for example) breed more and then post them asking for Charmander and Bulbasaur. Then you have all gen 1 and 6 starters in one game! (I only used these for examples, you can literally trade anything for anything, you'll just have more luck and faster luck trading for things of equal value such as starters for starters, fossils for fossils, version exclusive for version exclusive, etc)
for the bank you can't stop paying, you pay a once a year fee of $5 (again, for the entire YEAR) then you have 365 days to do whatever you want with it. You're strongly encouraged to keep as many pokemon in there as possible though because the more pokemon that are in your bank and the longer you keep them in there the more poke miles/battle points you get that you can then exchange in game for items.
I'm not sure what happens when the poke bank subscription expires (keep in mind, it's not a monthly things, it's $5 for a YEAR of service) but from what I read your poke bank account does get frozen (no access to your pokemon) but I believe you are given X number of days to pay for a new subscription but if you don't do it in that number of days your pokemon will get deleted.
And no, there is no X and Y game that has both versions, they're always two separate games HOWEVER depending on what country you're in some stores were selling both games in one package.
