Not a huge fan of rice, but I do like it on occasion. I'd potentially like it more if I had it in more dishes, but given I only ever seem to eat it with the same things, it's like it's been tied to those foods for me or something... Oh well lol. :p
Though we do use rice quite decently in our regular cuisines, but they are not alone and are always accompanied by other millet-based foods and vegetables. This is what I eat on daily basis mostly, apart from some "change-of-taste" dishes once in a while.
Rice, grains, millet, etc. are our staple ingredients, so we cannot make any dish without them. I guess rice is among the most prominent staple ingredient across Asia and Asian cuisines, hence seeing their extensive use here around is no wonder.
