I didn't know about EVs until about generation four. Once I had learned that you were able to train your Pokémon for them and double their strength and whatnot, I was pretty fascinated. :] Another thing would be trade-evolution; I wasn't aware of them until about gen three.
Just yesterday i was told in the trade corner irc that bugsy (2nd gym leader in johto) happens to be a boy. I never even suspected it for a second that *she* was a he.

EVs were the first thing I learned about Pokemon (that they never explain in the game). My Sandslash in Pokemon Yellow was able to take special attacks like a beast. It must have had a +SDef nature, and I do remember leaving it in against Water and Ice attack users quite often.
After taking a quick look at an EV list... I believe it's due to fighting a lot of Tentacool and Tentacruel.
