What do you think of the Let's Go evolution mechanic?

Redundant. It's like a cheaper take on Friendship evolution (which already increases while spending time walking with your Pokémon, but also have other aspects to take into account). Does not add anything to the experience besides creating new evolution methods for the sake of it.
 
It's okay. I just head to Alfornada and run back and forth twice and then level them up. Gotta slow down a couple times each way so they keep up.
I think it would be a better evo method if it didn't have the 'without returning to the Pokeball part'.

It's nothing but a minor inconvenience to me. There are far worse evo methods.
 
I don't like it since it's yet another evolution method you can't figure out from just playing the game. Game design being reliant on third party sites is bad design. There should at least be an NPC in a town that can advise you if you are stumped on how to evolve something.

Supposedly finds out the information via NPCs. Finds out about Pawmot from a trainer one (in Medali?). Mentions Rellor and Bramblin in the desert somewhere. Easily misses those, though.

Should have mentioned it in the school. Talks about Auto Battles in Battle Studies and walking around with Pokemon in Biology. Could have brought up walking evolutions then. Technically gives a very vague hint about Primeape in Biology.

It's not bad. I mean, it's better than other evolution methods, like trying to evolve the Galarian Yamask last generation, for example. Considering that I'm a player who is constantly walking with my Pokémon, it's just second nature for me. I've had my Gorochu (Pawmot) since the beginning of the game, and I've always walked with her. When she evolved, it just happened because I always walked with her and the rest of my party. Sure, they have trouble keeping up if you walk with them as you're traveling to certain areas or trying to reach a specific destination, but they have no problem keeping up if you have things to do in a certain area, such as look for certain Pokémon or engage in some EV training.
