How much do you care about IVs/EVs/optimal stats?

Not at all. I don't really feel the need to optimise these things when I don't play competitively...plus it'd take forever to get them to optimal levels and the in-game results wouldn't be worth it. Not for me! Pokemon is something I play to relax. If I want to pore over stats I'll play Disgaea, wheere my efforts will actually pay off <3
 
They've never been remotely necessary for general playthroughs, so in that case I don't really bother with that sort of thing outside of like, occasionally not wanting an absolutely craptastic nature on certain 'mons.

But it's not like I don't care about them at all either, as while I don't competitively battle anymore, I still usually engage in whatever version of the Battle Tower the generation has (where you do need to care about EVs/IVs/etc). And in addition to that, it is kind of nice to try to optimize certain favorites that will see long term usage (like my Volcarona and Zekrom).

Personally, I'd love to see IV's, EV's, and natures removed from the Pokemon games.
Just curious, why's that?
 
Because I feel that they put too much constraint on my Pokemon. Searching for a desirable nature is tedious enough, but searching or breeding for a Pokemon with desirable IV's is even worse. And don't get me started on EV's.

I think it makes perfect sense though. It's all about raising the Pokemon in an optimal way which fits in with the "lore" of the Pokemon universe. Whether someone finds it tedious or enjoys min-maxing, that's another thing.

Back on the topic. For competitive Pokemon or Battle Frontier, I absolutely care about these things. IVs not that much because I lack the dedication (I do compare and attempt to get a Pokemon as good as I can though), but nature and EVs are a must. For regular playthrough, knowing what the Natures do is a curse for me. These are my friends that I'm gathering and when I catch a Pokemon that I wanted on my team and end up with something like, Adamant Magnemite, it will perform perfectly fine, but I'll always have this feeling that it's really under-performing.
 
I honestly don't care about EVs unless I'm playing Emerald and building a team for the Battle Frontier. I've never really cared about them otherwise. If I want to use a Pokemon, I'm gonna use it. Stats don't matter, IVs don't matter, neither do EVs. But, that's just me. I understand that people out there do want their Pokemon to be absolutely perfect, but I just... don't I guess? @_@ To each one's own.
 
During the very first play through of a game I do not bother with natures, IVs, etc. I just want to have a pure experience playing with every Pokémon (with a few exceptions like I went out of my way for an Adamant Axew, hehe), getting to know the Pokémon personally, and just having fun! It's not about min-maxing yet.

Post game however, when more intense Battle Tower-esque events comes into play I definitely enjoy breeding for / searching for near perfect Pokémon. I enjoy the challenge and the sense of accomplishment when I finally get that perfect 'mon. I also like knowing that I can engage with competitive online battles should the mood strike! It's a labor of love and a test of patience and, I dunno, I find the payoff incredibly satisfying. :)
 
Definitely a lot when I get to post-game. In fact, I have a growing collection of BR mons which I have personally bred, soft reset, RNG abused, and those whose stats are Hyper Trained.

I'm definitely thankful about the QoL changes in recent games made for natures, EVs, and IVs and how accessible they are now. We now have nature mints, bottle caps and the Destiny Knot, and vitamins can now max a Pokémon's stat instead of capping at 100.
 
I've gradually dialled up my pedantic-ness. For a few years now I've cared about natures (last time I added a team member with a sub-par nature was my 2013 Diamond save, where I really didn't care as I knew all my Manaphy eggs had mediocre natures so it seemed to fit the theme), then I went to accepting neutral or good natures. In my most recent Poké-naissance after a HeartGold save with a neutral natured starter and Togepi with the rest of the team having good natures, then EV training them before Red. I then moved on to Black where they all have the right natures and some good IVs (for example my Swords Dance-using Samurott with a 29 Attack IV).
Now for my Platinum save I'm breeding for 2-3 good IVs, egg moves and then using Little Cup EV-training methods to trade them over so they won't be absurdly over-levelled. I've already gotten a Piplup with perfect Specials and Speed (I chose Piplup in the Platinum save so my rival still has an advantage) and a Starly with perfect Attack and Speed. Going for a Shinx, Budew, Riolu and Rhyhorn. The only one I won't add in only as soon as it can be gained in a normal save is Rhyhorn as Victory Road is far too late. It'll be with me and a Rhyhorn by the time I face Giratina.
I think my preferences are adaptable to my resources though. I have two DS systems and 3 Gen IV games so can accomplish a lot. In Gen III though I was previously limited to just one GBA, and now just one DSLite so am more accepting of just going for natures.
