I don't really have any themes or know enough of them to actually answer this. Most of my favorite songs came from Hoenn and Sinnoh games.

The Guardian Deity theme. It's the only one that immediately came to mind to me as being awesome. I seriously have to replay Sun and Moon soon. xD

The common background music in Poni Island. (The one that plays in Exeggutor Island and Poni Meadow, for instance.)

It is a beautiful track that I hope gets equally as good, if not, better next time.

A fourth Lycanroc forme, Lycanroc-Dawn.

New Oricorio in case there will be more islands, maybe another Necrozma forme (showing it's 'core' or something).

20. Would you prefer Gyms, Trials, or a mixture of both?
As long as they remain Alola-exclusive, I'm fine with trials. For any other game, gyms over trials.

21. Your hopes/expectations/ideas for USUM's story
More expansion on the lore of UB, Solgaleo/Lunala, Lusamine and Aether Foundation, and maybe finally a canon, cohesive descriptions of the multiple dimensions in the Pokémon world.

22. Would you like USUM to be easier or harder than SM?
SM was surprisingly hard so I'd like USUM to stay the same.

23. Your ideal postgame
REMATCHES, daily challenges/missions, a big postgame area. The region just feels very small and cramped, like there's nothing to explore further even if I tried.

Better postgame.

Even more abilities than we already have.

If you're assuming I'm picking one, I'd say Ultra Moon.

25. Your least wanted thing for USUM: Long cutscenes. The ones in S/M were fine, but they were a bit too long.

Since these will likely be the final main games of 7th Gen, I'd probably go with 8th Gen or some type of spinoff.
